Unlike other wine regions, Champagne is a tough place for finding new, affordable, exciting wines. The region is dominated by the big producers who can charge pretty much whatever they want – which is often well north of $50 for a single bottle of basic, not terribly interesting, non-vintage Champagne. It's a shame, because bubbly should never be boring.

That's why we were excited to come across Laculle, a small, family-owned producer that has a Champagne-making tradition extending back to about the same time the Bastille had a particularly unusual day. And in all those centuries since, the Laculle family has simply gone about their business, making great bubblies without succumbing to the temptation of big-winery processes or market trends. In our opinion, this is one of the best-tasting NV Champagnes for the buck – far more flavorful and versatile than what you'd get from a big-name house.

The secret is simply good vineyards in the Chervey area of Champagne, as well as straightforward, honest winemaking. The Laculles handpick the grapes, press the whole bunches gently, and let the wine ferment in stainless steel and rest for a full three years. Only from that point are the different lots tasted, blended and bottled for the second fermentation.

When we first tasted Laculle, we opened a bottle at lunch, with a wide variety of dishes. The wine drank beautifully on its own, before our appetizers landed on the table, and paired amazingly with every flavor and aroma each dish threw at it – from a cheesy burrata to a tartare to a duck dish and finally a fresh, light fish dish. We couldn't help but enjoy the Laculle through dessert, too. Needless to say, we didn't get a whole lot accomplished when we returned to the office that afternoon, but hey, we'd found a delicious, reasonably priced Champagne. That, alone, is cause for celebration.

Tasting Notes

With its fine, silky bubbles, this delightful, 100 percent Pinot Noir Champagne carries pure, unctuous, sweet fruit flavors of apple, pear and freshly picked grapes. As you'd expect with Champagne, there's an underlying yeasty, biscuit-like note that ties the aromas and flavors together. The wine finishes very clean and bright, with a lingering, refreshing citrus note. Beautiful to drink on its own, the wine also pairs nicely with sushi or freshly shucked oysters.
