If you met linebacker-framed Benoit and Paul Fouassier, you'd wonder what they were doing with a delicate wine like the 2010 Fouassier Cuvée Jules Pouilly-Fumé. Tending to tradition, as it turns out. The two represent the 10th generation of the Fouassier family, one of the oldest winegrowing families in Sancerre. Eighty percent of the family's holdings are Sauvignon Blanc vines. Clearly they have the experience and know-how to release a wine like today's Pouilly-Fumé.
The nose is restrained at first sniff, but give the wine time to warm up and it will reveal aromas of citrus pith followed by just-ripe kiwifruit and grapefruit. On the palate comes the textbook Pouilly-Fumé note of flint. Despite its marked minerality, there's a weight to this wine that makes it an ideal match for goat cheese salad, pan-fried Dover sole finished with a butter and tarragon, or even pâté slathered on a slice of baguette.
