Juicy chorizo, sweet roasted red pepper, spicy arugula, rich extra-virgin olive oil; I was under the bridge at London's Borough Market, and this was one of the best sandwiches I'd ever tasted. This chorizo from La Tienda is a ringer for the stuff that sent me over the moon. I'm thrilled to feature it here so that you can savor the same sort of moment.
You might not expect to find a bastion of Spanish food down in suburban Virginia. While the family-run La Tienda sources most of its products directly from Spain, it also makes a few fresh-frozen sausages in-house using Spanish recipes and humanely raised American pork.
Within this generous collection, I've included two different Spanish-style meats. The butifarra is a Catalan-style sausage handmade domestically by skilled butchers and flavored ever so simply with pork, sea salt and cracked pepper. This is a juicy, pristine sausage that's delicious in paella as well as on its own for breakfast or brunch.
The cooking chorizo, another Spanish classic made in the States by La Tienda's butchers, includes smoked Spanish paprika, sea salt from Cádiz and fresh garlic for an exciting bite. I adore cooking this sausage out of its casings and adding it to pasta dishes for a meaty flavor with a spicy kick. It's also incredible grilled for brunch, or on a fresh roll with whole-grain mustard.
There are boundless opportunities for culinary creations with this set of meats. I encourage you to add a little sausage to pastas or soups, or grill it solo for a summery meal.
Tasting Notes
The cooking chorizo has a lovely smoky flavor to it, complemented by paprika and pepper for a zippier flavor without being too spicy. It’s great cut in half, thrown on the grill, and then served on fresh bread with sweet roasted red peppers, arugula and a drizzle of good extra-virgin olive oil.
The butifarra is much milder with a softer mouthfeel, a perfect balance of salt and pepper and an almost sweet finish. I love to make a soup with white beans, kale and this sausage – it's simple yet filling and delicious. Don't be shy about grilling this sausage too, whether for a cookout brunch or casual lunch.

Storage: This meat arrives refrigerated. Place it in your freezer upon arrival and thaw thoroughly before cooking.
