Vinum Cellars produces some of the brightest, freshest, most palate-tantalizing wines around. From rosé to Chardonnay, the winery crafts fantastic vino that really delivers on deliciousness and value. Today's White Elephant blend exemplifies all that is great about Vinum and also holds a special place in the history of this passion project.
Vinum owners Richard Bruno and Chris Condos became friends as students at UC Davis, bonding over their shared love of lesser-known varieties. These self-proclaimed winemaking "underdogs" first collaborated in 1997 to craft a blend of Chenin Blanc, Viognier and Roussanne, inspired by the Loire Valley's great whites.
Today's wine is a blend of the same three grapes: 59 percent Chenin Blanc, which contributes vibrant acidity and honeyed flavors, 26 percent Roussanne for minerality and freshness, and 15 percent Viognier to enhance its beautiful aromas. The end result is an Old World-style wine that combines exquisite balance and freshness.

If you enjoyed the Vinum Chenin Blanc-Viognier offer when it was featured on Lot18, you will absolutely adore the White Elephant, which exhibits similar floral and honeyed aromatics. The Roussanne adds a flinty minerality and sophistication to this undervalued bottle, which is sure to impress even the most finicky palates. I loved the way this blend, perfect as an aperitif or pairing wine, stood up to brie, quiche Lorraine and even cioppino, the classic San Franciscan fish stew. The wine's acidity cuts cleanly through spice and fat, making it a versatile pairing for meals as different as barbecue and salad with chèvre.
