The Pommery 2004 Grand Cru Champagne is a terrific example of how good things can come to those who wait. It was made from a selection of grapes from seven different Grand Crus and was aged for more than four years on its lees. The end result is a wine to savor, but it's still fresh and youthful, so it would benefit from aging in your cellar if you're not quite ready to open it at a lavish dinner. I wouldn't fault you, though, for giving in to temptation and popping the cork as soon as the bottle lands on your doorstep.
Though still youthful and fresh, there is an underlying richness to this wine, from its elegant gold color to its concentrated nose to its long, lingering finish. Marked by aromas and flavors of white flowers, honey and lemon zest, as well as hazelnut and freshly baked bread, this wine has a creaminess that would make it a perfect partner for rich meals. Try it with a lobster tail and melted butter, or chicken in a mushroom cream sauce, and enjoy it now through 2023.
